RIPENING
IN THE FIELDS
The tomato reaches its best quality only at the right degree of ripeness. In the fertile soils of Southern Italy, we carefully monitor every stage of growth: it is at this moment that the color, flavor, and organoleptic characteristics that make our tomato unique are formed.
2.
HARVESTING
When the fruit is at its peak, harvesting begins. A delicate step that requires precise timing: the tomato is quickly transferred to our facilities in San Marzano sul Sarno to be processed within 24 hours of harvesting, preserving all its freshness intact.
3.
SELECTION
Upon arrival at the facility, each tomato is carefully selected. Only the fruits that meet our quality standards for appearance, texture, and ripeness are approved for processing. A rigorous inspection that begins even before transformation.
4.
PROCESSING
The tomato is selected and processed following a careful and controlled procedure: heat facilitates the removal of the skins, while subsequent refining separates the juice from the solid parts, until the right density and consistency are achieved. The result is a preserve with a vibrant color and full flavor, as if just harvested.
5.
QUALITY CONTROL
AND PACKAGING
Before filling, each container is thoroughly sanitized. After sealing, the product undergoes pasteurization and cooling. Only after a final quality control, which verifies the integrity and compliance of each piece, is the preserve ready to leave our facility.
